In the case of Shy Brothers Farm of Westport Point, Massachusetts, the answer is four dairy-farming Santos frËres plus their soft-spoken Southern-born partner, Barbara Hanley. You won’t mistake Shy Brothers’ French-style farmstead cheeses for anything else on a salad or hors d’oeuvre plate-they are tiny, thimble-shaped morsels (dubbed “Hannahbells” after the Santos’ mother) that pack a dramatic throw-weight of pungency and lingering flavor. They come scented with natural herbs and seasonings such as lavender, rosemary and-not to be missed-chipotle.
